100 Happy Days Challenge: Day 13

Home cooking

Those of you who know me (or have followed my blog for a while) know that I travel a lot.  Therefore, it’s not often that I actually get to cook meals at home.  And, let’s face it, it’s not fun to cook a nice meal for just one person.  I decided to go all out and make braised pork belly with Chinese mushrooms tonight.  I got the ingredients from T&T while I was in Calgary yesterday.  This morning, I started the 8 hour soak for the mushrooms while I searched for recipes online.  I ended up doing a mix of this recipe from kitchen flavours and this recipe from Petite Nyonya’s Kitchen, with a few substitutions.  Along with rice and steamed baby bok choy, it was a really yummy supper.

Good thing I like it.  I’ll be eating it for the coming week…
