Paleo Pizza

Today was the official last day of the boot camp and meal plan.  I went out with a bang, trying out this paleo pizza recipe.  It’s a bit odd and odd-looking.  The crust is almond flour, almond butter and egg.  The recipe called for way too much topping, hence the odd look to my pizza. (I was supposed to add fresh tomato after cooking but I didn’t have room!)  However, I was pleasantly surprised by the taste.  I could even pick it up like a slice of pizza.  The only thing that I missed from the real thing was the cheese.

I have a couple of make up classes next week, then I go for my reassessment.  Hopefully I’ve made some improvements over the last 3 weeks.  I think I’m going to retain some of the paleo diet moving forward because I ate some pretty good meals.  I miss yogurt and cheese though.  And coffee (I don’t like black coffee).  The instructor from the Fitness Smorgasbord class is planning a boot camp next month, so I think I’m going to sign up for that.  And hopefully I keep on the right track throughout the whole summer!
